Shrimp Tortilla Pizza

One pizza per person is standard! This is a spicy shrimp tortilla pizza. The taste may vary slightly depending on the type of tortilla. Personally, I preferred the milk tortilla over the whole wheat one.(Be careful: 4 pieces of peperoncino can be quite spicy)

Shrimp Tortilla Pizza

Ingredients

  • Tortilla 1ea
  • Butter 20g
  • Tomato sauce 2tbsp
  • whole peperoncino 4ea
  • Garlic 5ea
  • Cherry Tomato 4ea
  • Shrimp 8ea
  • Mozzarella 120g

Instructions

  1. Sauté two thumb-sized pieces of butter with four peperoncino peppers, rehydrated frozen shrimp, and minced garlic. Once sautéed, set aside some of the flavored oil in a separate bowl — this will be used as a sauce on top of the tortilla.
  2. Place a tortilla in a frying pan over low heat. Spread tomato sauce on one side, then top with mozzarella cheese and quartered cherry tomatoes. Cover with a lid and cook on low heat for about 5–7 minutes, making sure the tortilla doesn't burn.
  3. Once the cheese has melted, turn off the heat and transfer the tortilla pizza to a plate. Pour the previously sautéed shrimp and garlic butter oil over the top. For extra flavor, you can drizzle a little allulose if you like, and adding a handful of canned corn is also a great touch.
