Herb-Infused Roast Chicken with Garlic and Lemon

Ingredients

  • whole chicken 1kg
  • fresh rosemary 2tablespoons
  • fresh thyme 2tablespoons
  • garlic cloves 4cloves
  • lemon 1large
  • Olive oil 3tablespoons
  • salt 1teaspoon
  • black pepper 1teaspoon

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix the olive oil, chopped rosemary, thyme, minced garlic, salt, and pepper.
  3. Rub the herb mixture all over the chicken, including under the skin for maximum flavor.
  4. Cut the lemon in half and place one half inside the cavity of the chicken and squeeze the juice from the other half over the chicken.
  5. Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 75°C (165°F).
  6. Let the chicken rest for 10 minutes before carving.
  7. Serve with your choice of sides, such as roasted vegetables or a fresh salad.
  8. Tip: Baste the chicken with its own juices halfway through cooking for extra moisture.
