Herb-Infused Roast Chicken with Garlic and Lemon

Ingredients
- whole chicken 1kg
- fresh rosemary 2tablespoons
- fresh thyme 2tablespoons
- garlic cloves 4cloves
- lemon 1large
- Olive oil 3tablespoons
- salt 1teaspoon
- black pepper 1teaspoon
Instructions
- Preheat the oven to 200°C (400°F).
- In a small bowl, mix the olive oil, chopped rosemary, thyme, minced garlic, salt, and pepper.
- Rub the herb mixture all over the chicken, including under the skin for maximum flavor.
- Cut the lemon in half and place one half inside the cavity of the chicken and squeeze the juice from the other half over the chicken.
- Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 75°C (165°F).
- Let the chicken rest for 10 minutes before carving.
- Serve with your choice of sides, such as roasted vegetables or a fresh salad.
- Tip: Baste the chicken with its own juices halfway through cooking for extra moisture.
