Spicy Beef Goulash with Paprika

Ingredients
- beef stew meat 500g
- Onion 1large
- bell pepper 1large
- Garlic 3cloves
- paprika 2tablespoons
- beef broth 500ml
- carrot 1medium
- tomato paste 2tablespoons
- Olive oil 2tablespoons
- bay leaf 1leaf
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent.
- Add minced garlic and cook for another minute until fragrant.
- Stir in the beef stew meat, browning it on all sides.
- Add chopped bell pepper, diced carrot, and paprika. Stir to combine.
- Mix in the tomato paste and cook for a minute.
- Pour in the beef broth, add the bay leaf, and bring to a boil.
- Reduce heat and let it simmer for about 1.5 hours, or until the beef is tender.
- Season with salt and pepper to taste before serving.
