Soy Sauce Braised Chicken Wings

Ingredients
- Chiken wings 600g
- Milk 1
- Soy sauce 3tbsp
- oyster sauce 1tbsp
- oligosaccharide 1.5tbsp
- Brown sugar 1tbsp
- Cooking wine 2tbsp
- black pepper 2tsp
- Water 3tbsp
- Garlic 8ea
- Onion 0.5ea
- whole peperoncino 4ea
- Chili pepper 3ea
Instructions
- Soak the chicken wings or drumsticks in about 200 ml of milk for 10 minutes.
- While soaking, prepare the sauce by mixing all sauce ingredients. Sauce: Soy sauce: 3 tbsp Oligosaccharide syrup: 1.5 tbsp Brown sugar: 1 tbsp Plum syrup (maesil-cheong): 1 tbsp (If unavailable, use an additional ½ tbsp of oligosaccharide syrup) Oyster sauce: 1 tbsp Cooking wine: 2 tbsp Water: 3 tbsp Black pepper: 2 tsp
- Rinse the soaked chicken under running water to remove any odor and pat dry with kitchen towels.
- Heat oil in a pan and pan-fry the chicken until golden brown (about 70% cooked).
- When the chicken is about 70% cooked, add whole garlic cloves, thinly sliced onion, and 4 pepperoncinos. Continue cooking.
- When the chicken reaches about 80% doneness, roughly slice the 3 Cheongyang chili peppers, add them to the pan, and simmer.
- Once the sauce has thickened and reduced, the dish is done.
